Behind the dessert direction for the WEM Foundation's 2025 gala — where the cake was a second centrepiece, and the mocktail bar was the quiet hero of the night.

§The brief

A black-tie gala for 200 guests. The palette: deep plum, oxblood, warm gold. The ask: desserts that photograph as well as they taste, and a mocktail programme sophisticated enough to feel like the wine pairing.

§The composition

We built a six-metre dessert wall — petit fours in three colourways, a hand-sculpted centrepiece cake dressed in 24k leaf, and two mocktail stations framing either end. The pour list: Velvet Hibiscus, Plum Smoke, and a custom one-night-only called Midnight Bloom.

§What stayed with us

A guest asked if the cake was real. Twice. That is, privately, our favourite compliment.
